MESSAGE FROM LEONA

Thank You!

My sincere thanks for your friendship and support during my 3 years in the CAE BEd HRD Coordinator role!

I have enjoyed my time at the Faculty of Ed, but as you know I have energy and passion for many things, and I’m choosing to make another transition.

I will continue to teach in the program and devote more time to my business Choice Point Coaching and Facilitation.

I’m always open for a tea on my veranda so take this as an invitation.

I wish you all the best as your journey continues.

I’m attaching a couple recipes for treats I sometimes brought in to work – enjoy!  (Click here for Bran Berry Muffins and here for Oatmeal Cookies)

Sincerely,
LeonaMy home email is here, and my number is 394-6972.

13-June-2014 – Faculty Retreat Postponed

As the primary purpose of the upcoming faculty retreat was team building, and a large number of our team is not available to attend on June 20th, we will be postponing the planned retreat.

It is our hope that a new future date can be found that will accommodate and be built in to most team members schedules. New timing for the retreat will be an item for the agenda on the upcoming on-line FEC meeting planned for August 1st.

DIGITAL ECONOMY RESEARCH TEAM SUCCESSFULLY CONCLUDES FIRST PHASE OF RESEARCH PROJECT

The DERT team is delighted to announce that the first phase of their research project has come to a conclusion…with great success! First, students from two Island high schools – Three Oaks Senior High in Summerside and Colonel Gray in Charlottetown – successfully completed their projects with the help of a variety of industry professionals acting as cultural mentors. These projects, which ranged from video production, to animation, to murals, to live drama, were showcased at event nights in both cities. Most recently, adult education students taking English 621 at Holland College campuses across the province also had the opportunity to work with a cultural expert to complete multimedia projects. This past month, these students presented their portfolios of themed websites, original blog content, video production and more.

Congratulations to all of our participating students and graduates!

BOOK ORDERS

The UPEI Bookstore requests that instructors submit book orders for September classes as soon as possible.

If there are access codes/e-books for online course content, please include the ISBN for these items in your order. The Bookstore would like to give students more choices with the convenience of being able to pick up all of their course materials at the Bookstore. Many students take advantage of the different forms of payment the Bookstore offers, such as charging to their student account.

Please be sure to send the correct ISBN, especially for text packages and/or e-books to ensure ordering of the proper text books. If there is no text book required for a course, it would be greatly appreciated to notify the Bookstore also. Also, indicate if your course is cross listed.

If you require students to have other course materials such as specific calculators, dissection kits, clickers, graph paper, notebooks etc. you can email bookstore@upei.ca to ensure we will have sufficient quantities in the store.

You can order by using one of the following methods:

BLACK MIDNIGHT CAKE AND SNOW PEAK FROSTING

The arrival of Nicole Higginbotham in our main office was made all the more sweet by a wonderfully delicious cake baked by Carolyn Francis.  Carolyn’s cake, baked from a recipe given to her by a grade 5 student (Earl) in the early 70’s, did not disappoint!  Due to high demand, she shares her never-fail recipe here:

EARL’S SUPER DELICIOUS BLACK MIDNIGHT CAKE

  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup cocoa
  • 1 tsp salt

Mix these together in bowl.

Add these ingredients in order listed

  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1 cup black coffee

Batter is very thin!!

Bake in layer pans at 350 degrees for 35 minutes

SNOW PEAK FROSTING

  • 1 1/4 cup light corn syrup (or maple syrup or dark corn syrup)
  • 2 egg whites
  • Pinch salt
  • 1 tsp vanilla

Heat syrup to boiling (watch it as it boils over quickly)

Beat egg whites at high speed, until soft peaks are formed when the beater is lifted

Add pinch of salt

Slowly pour the syrup into the egg whites while continuing to beat until the frosting is fully and forms peaks.

Fold in vanilla.

This will frost the tops and sides of a double layer cake. ( 8 or 9 inch)

(Special thanks to Carolyn, and Earl, for sharing this yumminess!)
